CHARLOTTE, NC (WBTV) - Q2U owner Brian Rich visited WBTV News at Noon today, sharing his spice rub marinade recipe with anchor Kristen Miranda.
Q2U's vinegar-based BBQ sauce was recently chosen as one of three official sauces for the 2012 Democratic National Convention. Q2U is located at 4052 Charlotte Highway in Lake Wylie, SC.
Here's the recipe:
1/4 cup salt
1/2 cup sugar
1/4 cup chili powder
1/4 cup ground black pepper
1/2 cup ground cumin
1/2 cup smoky paprika
1/8 cup cayenne pepper
3/4 cup light brown sugar
6-8# Boston Butt
Combine all ingredients by hand or use a food processor. Generously rub spice mix on butt. Coating will be thick. Let sit up to an hour (you should see it start to "sweat"). You can cook overnight in a crock pot...or cook over indirect heat on either a charcoal or gas grill. (If you're using a gas grill, light one side and place the butt on the other side.) Wrap water-soaked hickory chips in foil and place in bottom of grill. Cook butt for four hours. Wrap butt in aluminum foil and let sit over indirect heat for an additional two hours. Butt is done when the internal temperature is 190 to 195 degrees. Place butt on wooden chopping block or serving platter, pull out the bone (should pull out cleanly) and chop. Enjoy!
